Recipe: easy peppermint ice cream {without an ice cream maker}
One of my fave Christmas treats is peppermint ice cream.
And even though we're down to the very last bits and pieces of Christmas left in our house, I thought I'd share anyway.
Pin it for next December. ;)
I've experimented with making my own ice cream without a maker a time or two before, I thought I'd give peppermint a try too.
I think this is the best version of them all.
Maybe because there's something so satisfying about breaking candy canes into tiny pieces with a hammer??
Ha!
You'll need:
1 can sweetened condensed milk (not evaporated milk)
2 tsp. peppermint extract
1 pint heavy whipping cream
5 or 6 candy canes, crushed (more or less if you prefer)
food coloring if you like pink peppermint ice cream more than white
Start by whipping the cream.
In a different bowl, combine all ingredients except the cream.
Fold in the whipped cream.
Freeze until firm, about 6 hours, and dig in!
