Comfort food: rice pudding


For a sweet treat yesterday I made rice pudding.  I hadn't made it in so long, I almost forgot how much I enjoy it.  


What you'll need:  

1 cup instant rice
2.5 cups milk
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 cup sugar
2 eggs, lightly beaten
1/2 tsp. vanilla extract
optional:  handful of raisins (I prefer it without, but the boys love raisins so I add them in)


In a saucepan, combine rice, 2 cups milk, salt, cinnamon, nutmeg, sugar and raisins if you're adding them.

Bring to a rolling boil, stirring constantly.

Reduce heat to low/medium, and boil slowly for 10 minutes, stirring occasionally.

Mix eggs and remaining milk.

Slowly add egg mixture to pan, stirring vigorously with a fork.  (If you don't mix like crazy, the eggs will cook in weird spots and your pudding will be more like fried rice.  No bueno.)

Cook over medium heat until thickened.

Stir in vanilla.

Let cool for 10-15 minutes and enjoy!

  2. I really love rice pudding. My grandmother used to make it and I've never had any as good as hers.
