DIY Girl Scout Cookies


Somehow I came across this wannabe Girl Scout Samoas recipe.

And since we live in a neighborhood without a single Girl Scout, I'm so glad I did. 

These aren't exactly quick to make, but they're easy and almost as good as the real thing.  Can't beat it.


I used an itty bitty juice glass as a cookie cutter and a pastry tip for the holes.  The cookies still turned out huge.  These are so caramel-y and rich, smaller is definitely better.



I ended up with 30 cookies and enough topping for 24.  The cookies were still yummy plain. 


I couldn't wait a second longer and resorted to the freezer for my almost finished cookies.

  4. thanks for the link, i saw it somewhere else and forgot to bookmark it. my girl scout cookie recipe? from ms. take a ritz cracker and dip in melted mint flavored buttons (wilton makes, they have them in colors and also mint). sometimes it can be hard to find. the joanns in vernon hills is the only place i have seen them so far. then refrigerate for a wee bit. taste exactly like thin mints!!

  8. I'm always so impressed with your photography! Beautiful job. Do you always use natural lighting, or do you use other lamps or lights? I just wrote about my lighting issues on Friday. Maybe I should just quit my teaching job and stay home so I can take photos with natural light... yep. Sounds like a plan!

  12. yum yum! these look delicious! samoas are my 2nd fave (to the thin mint) GS cookie :-) I recently found a recipe for faux thin mints made w/ ritz crackers and they too were delicious! thanks for sharing; i may have to give these a whirl! - Sara
